Slice all of the vegetables.
Saute the aubergine slices until tender.
In a separate pan sauce the onions, garlic, peppers, carrots and swede until tender.
Soak and cook the lentils as per packet instructions, sieve and mix with the onion and pepper mixture. Stir in the dried fruit.
In an oven proof dish, place a layer on aubergine slices, then add the onion and pepper mixture, add a final aubergine slice to the top and bake in the oven for 15 minutes at 180C.
