Sear the beef in a hot pan until it colours.
Remove the beef and add the carrots, onion, garlic and swede into the pan and cook until tender.
Add the beef back into the mixture, adding a little water and beef stock, stirring well.
Put in oven at 170C for 3-4 hours.
Dice the potatoes and roast in the oven for 30-40 minutes.
Steam broccoli until tender.
