Butternut Squash and Kale Curry

Ingredients:

  • 80g sweet potato
  • 160g butternut squash
  • large handful of kale
  • 180g carrot
  • 1 large onion
  • 1tsp mild curry powder
  • 75g red lentils
  • 1tsp garlic puree

Method:

​Slice the potato, butternut squash, carrots and onion and soften in a large saute pan.

Once the mixture has softened, add the curry powder, garlic and lentils into the pan. Add around 20ml of water and simmer for 15 minutes.

Add the kale into the mixture and simmer for a further 10 minutes.

Serve.
