Jacket Potato with Broccoli & Cauliflower

​Serves 2 adults, 2 children

Ingredients:

  • 4 large jacket potatoes
  • 130g broccoli
  • 130g cauliflower
  • olive oil
  • black pepper

Method:

​Bake the jacket potatoes for approx. 1 hour at 200C.

Steam the broccoli and cauliflower until tender.

Once potatoes are cooked, scoop out the potato into a bowl.

Add the broccoli, cauliflower and potato into a bowl and mix.

Put broccoli, cauliflower and potato mixture back into the potato skin, and serve.
