Jacket Potato with Leek and Cheese

Ingredients:

  • 4 Jacket potatoes
  • 200g mature cheddar cheese
  • 250g leeks

Method:

​Serves 4

Bake the jacket potato for approximately 1 hour until the potato is tender.

Soften the leek in a saucepan with a little butter.

Scoop out the jacket potato and place potato mixture in a bowl, adding the cheese and leek and stirring well.

Add the mixture back into the jacket potato skins and serve.
