Place the cinnamon, turmeric and cumin in a small bow and mix to combine. Place the lamb in a large bowl and add half of the spice mix, and stir.
In a large casserole dish add the sliced onion and the remaining spice mix, cooking over a gentle heat for 10 minutes until the onions are soft. Add the crushed garlic and continue cooking for 3 minutes.
In a separate pan brown the cubes of lamb and add the meat into the casserole dish.
Place the chopped tomatoes, apricots, carrots and mixed beans into a pan and simmer for 5 minutes. Add to the casserole dish and place in a preheated oven at 150°C for 2 hours until the meat is tender.
