Lemon Chicken with Orzo


  • 170g minced chicken
  • 1 large onion, chopped
  • 80g sweetcorn
  • 80g Orzo pasta
  • 80g carrots, diced
  • 80g swede, diced
  • 20ml lemon juice
  • 240ml chicken stock
  • 1tsp oregano
  • 1tsp parsley


In a large pan, add oil and saute the minced chicken until

cooked. Add the onion and herbs,
stirring well, and continue cooking until the onions soften.

Add the swede, carrots, chicken stock, orzo pasta and lemon
juice into the pan and mix well.

Bring the mixture to the boil and simmer until the pasta is
soft, stirring regularly to prevent the pasta sticking to the bottom of the

Once the orzo pasta is cooked, stir in the sweetcorn and
simmer for 2-3 minutes.

Serve with a side of tasty vegetables.
