Mini Banana and Oat Muffins


  • 200g plain flour
  • 80g porridge oats
  • 100g caster sugar
  • 1tsp baking powder
  • 1tsp ground cinnamon
  • 1 egg
  • 175ml milk
  • 250g mashed banana


Makes 12 muffins

Preheat the oven to 200°C

Combine the flour, oats sugar, baking powder and cinnamon.

In a large bowl beat the egg lightly, and stir in the milk. Add the mashed banana and combine thoroughly.

Stir in the flour mixture into the banana mixture until combined.

Divide the mixture between 12 muffin cases and bake for 20 minutes until golden.
