Pepper Sticks with Cucumber and Spring Onion Salsa

Ingredients:

  • 36g cucumber
  • 40ml olive oik
  • 320g red pepper, sliced into sticks
  • 40g sweetcorn
  • 60g spring onion, finely sliced
  • 8ml lemon juice

Method:

Slice the red peppers into sticks.

Add the olive oil, lemon juice, spring onion, cucumber and sweetcorn into a blender and blend until smooth.

Serve.
