Pepper Sticks with Cucumber and Spring Onion Salsa
- 36g cucumber
- 40ml olive oik
- 320g red pepper, sliced into sticks
- 40g sweetcorn
- 60g spring onion, finely sliced
- 8ml lemon juice
Slice the red peppers into sticks.
Add the olive oil, lemon juice, spring onion, cucumber and sweetcorn into a blender and blend until smooth.
