Pumpkin, Sweet Potato and Kale Curry

Ingredients:

  • 280g sweet potato, diced
  • 160g kale
  • 1tsp mild curry powder
  • 160g carrots
  • 1 large onion
  • 1 clove of garlic
  • 165g pumpkin, cubed
  • 6-8 new potatoes

Method:

​Bake the new potatoes in the oven at 200C for 30 minutes.

Saute the onion and garlic in a pan, and add the curry powder.

Add the carrots, pumpkin and sweet potato into boiling water and cook until tender.
