In a large saucepan add a little sunflower oil and saute the onion and garlic.
Add the carrots, swede, sweet potato and water and stir thoroughly. Simmer until the sweet potato is soft.
Add in the spinach and stir well. Once the spinach has wilted, add into an oven-proof dish.
Sprinkle the grated cheese over the top of the mixture and put in a pre-heated oven at 180C and heat until the cheese is golden and melted.
Steam additional vegetables and serve.
