Heat oven to 200C. Put potoatoes on a baking tray with a little oil and bake for 20 - 30 minutes until tender.
In a large pan saute the onions, pepper and garlic until tender. Add the turkey, mixing well.
Add in the thai curry paste and sizzle for 1 minute, then add the coconut milk and simmer for 10 minutes.
Add the desiccated coconut into the mixture, stirring well and continue to simmer for a further 10 minutes until the turkey is fully cooked.
In a separate pan, steam the green beans until tender.
