Turkey Thai Curry, French Beans and Potatoes


  • 1 pepper
  • 1 large onion
  • 1 clove of garlic
  • 340g potato
  • 340g green beans
  • 1/2 tsp coriander
  • 340g diced turkey
  • 3g thai green curry paste
  • 35g desiccated coconut
  • 35ml coconut milk


Heat oven to 200C. Put potoatoes on a baking tray with a little oil and bake for 20 - 30 minutes until tender.

​In a large pan saute the onions, pepper and garlic until tender. Add the turkey, mixing well.

Add in the thai curry paste and sizzle for 1 minute, then add the coconut milk and simmer for 10 minutes.

Add the desiccated coconut into the mixture, stirring well and continue to simmer for a further 10 minutes until the turkey is fully cooked.

In a separate pan, steam the green beans until tender.
