Vegetable and Potato Curry Bake


  • 200g Carrots, diced
  • 50g Sweetcorn
  • 50g Peas
  • 300g Potato, diced
  • 1tsp Mild Curry Paste


Serves 4

Add the potatoes​ into a pan of boiling water and simmer until tender.

In a separate pan add the carrots, sweetcorn and peas and saute until tender.

Make a sauce by combining the curry paste with water and add to the vegetable mixture, stirring well.

Gently stir in the potatoes and serve.
