Brazilian Chicken with Rice

  • Minced chicken
  • Chopped tomatoes
  • Diced onion
  • Diced mixed peppers
  • Cocounut milk
  • Mild madras curry powder
  • Gluten free flour
  • Fresh garlic puree
  • Sunflower oil
  • Rice to serve


  1. ​Heat a table spoon of sunflower oil in a pan and brown the chicken
  2. Stir through the garlic puree and madras curry powered to release the flavour
  3. Add the onions and peppers
  4. Add the chopped tomatoes and coconut and the bring the pan to boil
  5. Mix the gluten free flour with cold water to add thickness
  6. Ensure temperature reaches 85c for 5 seconds
